Né à Canton en 1945 dans une famille de 12 enfants, Woo-ping dit "Gros Yeux" est initié au Kung fu et après avoir suivi les cours de l'Opéra de Pékin sous la direction de son père, Simon Yuen Siu Tien (également professeur de Jackie Chan), il participe également (en tant que cascadeur) à la légendaire série des Wong Fei-hong jouait par Kwan Tak Hing et travaille comme cascadeur chez les frères Shaw (surtout pour les films de Chang Cheh) - avant de devenir l'un des coordinateurs de combats les plus prisés de Hong Kong.
En 1981, il monte sa propre société de production : la Peace Film Production Co.. Après avoir été directeur des combats dans moult films, il était normal qu'il réalise ses propres oeuvres. Enfin, il a fondé sa propre maison de production en 1979. Il a dirigé les plus grands (Jackie Chan, Jet Li, Donnie Yen dont il fut le mentor), il est à l'origine de plusieurs petits chefs d'oeuvre comme Iron Monkey et Tai Chi Master, il sait aussi bien réalisé des films en costumes que des polars survitaminés comme In The Line Of Duty 4 (Le Sens du devoir IV) ou Tiger Cage 2 (selon le goût du public). Mais il est faillible car il est aussi capable du pire : Iron Monkey 2. Mais il est finalement revenu sur le devant de la scène en étant à sa meilleure place : celle de directeur des combats d'un film d'un autre. Le meilleur exemple est bien évidemment après Matrix, Crouching Tiger, Hidden Dragon (Tigre & Dragon), réalisé par Ang Lee où Woo-ping était celui qui était chargé de mettre les chorégraphies imaginées par le metteur en scène. Le dernier exemple que je citerai est Once Upon A Time In China (Il était un Fois en Chine) où il nous livre ce qu'il a fait de mieux dans sa carrière : avec Tsui Hark, ils ont formé une équipe du tonnerre, preuve une fois de plus que Woo-ping se surpasse que quand il seconde un film. Le succès internationaux des Matrix continuent faire de lui le directeur des scènes d'action le plus courtisé du moment. A noter que Woo-ping a également élaboré les mouvements pour les bagarres du jeu vidéo "Enter the Matrix" (2003).
On peut enfin ajouter que Woo-ping est également acteur puisqu'on peut le voir en soldat mourant dans Eastern Condors, Wicked City et King Of Beggars.
